Ingredients:
– 1 whole-wheat tortilla wrap
– 2-3 eggs
– Prepared and crumbled Ready Crisp
Bacon (3 slices)
– ¼ cup diced red/yellow peppers
– ¼ grated cheddar cheese
– 2-3 tbsp. medium salsa
– Splash of milk
– Salt and pepper to taste
Instructions:
– Lay tortilla on a large plate.
– Spread salsa evenly along middle
– Crack eggs into a microwave-safe bowl and add milk, salt and pepper.
– Whisk with a fork until well combined and beginning to bubble.
– Microwave for 30 seconds.
– Take eggs out, mix them, and put back in microwave for 20 seconds.
– Repeat last step until eggs are cooked
– Immediately sprinkle in peppers, bacon bits, and cheese.
– Fold in until cheese starts to melt
– Pour egg mixture on top of the salsa and fold the burrito by tucking in the ends and rolling carefully.
