Ingredients:
– 2 cups frozen corn
– 1 cup canned black beans
– ½ cup finely diced red pepper
– ¼ red onion finely chopped
– Handful of chopped cilantro
– Juice of ½ lime
– 1 tbsp. olive oil
– 1/2 tbsp. rice vinegar (can be re
placed with regular vinegar)
– Cumin
– Salt and pepper to taste

Instructions:
– Defrost frozen corn in the microwave in a large bowl (30-45 seconds).
– Mix together the lime juice, olive oil, rice vinegar, and cumin in a small bowl.
– Add the black beans, red pepper, red onion, cilantro, and dressing to the defrosted corn, and stir together well.
