Ingredients:
– 1 cup of prepared Minute Rice (see
box for instructions)
– ½ cup of evenly and finely chopped
vegetables of your choice
–  3-4 tbsp each of soy sauce and
teriyaki sauce
–  2 eggs

Instructions:
– Prepare scrambled eggs as
indicated above. Set aside.
– Put vegetables in a microwave-
safe bowl with an inch of water.
– Cover the bowl with plastic wrap
and fold one side for a vent.
– Microwave vegetables for 3-5 minutes, checking occasionally to ensure they do not become overcooked and mushy. Strain any excess water.
– Combine eggs and vegetables in prepared Minute Rice.
– Add soy sauce and teriyaki sauce and stir to combine.

Tips:
– To add substance to the stir fry, chop and heat a protein of your choice.
