I came up with this recipe one night when I was dying for a S’more. It was raining and there was no way I was going to get my S’more fix using the traditional campfire method. This recipe is a hit with the whole family.

Ingredients

Cookie Batter:

1 cup of melted butter
1 cup brown sugar
½ cup white sugar
2 eggs
1 ½ tsp vanilla extract
2 cups of flour
2 ½ cups of oatmeal
1 tsp baking soda
½ tsp of salt
1 cup of chocolate chips

Marshmallow Topper:

1 tbp butter
1/3 of a bag of large marshmallows
¼ cup of Kahlua (optional, I like to get a little boozy)

You will need an eight or 10-inch tart pan, a small pot, and mixing bowls.

1.) Pre heat the oven to 375°F.
2.) Mix all dry ingredients from the cookie batter together in one bowl and mix all the wet ingredients in another.
3.) Stir mixtures together.
4.) Fill tart pan with mixture and place in the oven for 22-25 minutes.
5.) While the cookie base is baking start prepping your marshmallow topper. Place your pot on the stove on medium heat and add your butter. Allow to melt.
6.) Once butter has melted add your marshmallows and Kahlua.
7.) Continue to stir and be careful not to burn the marshmallow.
8.) Turn heat down while waiting for the cookie base.
9.) When the cookie is ready, take it out of the oven and get ready to pour the marshmallow mixture on top. It’s best to do while the pastry is still hot. That way it makes it easier to spread. You can also sprinkle chocolate chips on top for added gooeyness. Let cool before serving.
