If you’re looking for the perfect way to use up some of those fresh-picked apples this fall season, why not cook a little something-something that isn’t something as basic as an apple pie? 

Don’t worry about doing some research: the Charlatan contributor Nicky Shaw has got you covered with this delicious apple crepe recipe!

Preliminary Information

Cooking Time: Approximately 30 minutes.

Ingredients

Crepe Foundation Crepe Apple Filling Optional Topping
  • 2 eggs
  • 1 cup of flour
  • 1 cup of milk
  • 2 teaspoons of vanilla
  • ⅛ teaspoon of salt
  • ⅛ teaspoon of baking powder
  • 2 tablespoons of olive oil
  • 2 cups of peeled and diced average-sized gala apples
  • 1 teaspoon lemon juice
  • ½ teaspoon of cinnamon
  • ½ teaspoon of vanilla
  • ⅛ teaspoon of nutmeg 
  • 1 ½ cups of water
  • ½ cup of brown sugar
  • 1 tablespoon of butter
  • 1 tablespoon of cornstarch
  • Preferred amount of whipped cream 
  • Preferred amount of cinnamon

Instructions

Crepe Foundation

  • Step 1: Mix eggs, milk, and vanilla in a medium mixing bowl until combined. 
  • Step 2: Add salt and baking powder into the wet mixture and mix thoroughly. 
  • Step 3: Gradually add in flour to create a smooth homogeneous batter that is loose and not thick.
  • Step 4: Heat pan on high until hot then turn down to medium heat for cooking.
  • Step 5: Put one tablespoon of olive oil in a non-stick pan and tilt the pan to coat it with the oil.
  • Step 6: Pour around a half cup of batter into the pan and tilt the pan so the batter covers the bottom of the pan. 
  • Step 7: Cook until the edges of the crepe lift, or around approximately 15 to 30 seconds, and flip to cook the other side for the same amount of time.
  • Step 8: Repeat steps six to seven for three crepes, then add another tablespoon of olive oil to the pan before repeating steps six to seven for the last three.

Crepe Filling

  • Step 1: Combine peeled and diced apples with lemon juice, cinnamon, nutmeg, and vanilla in a small or medium size mixing bowl.
  • Step 2: Put 1 and a ¼ cup of water into a saucepan and bring to a boil.
  • Step 3: Add sugar into boiling water while stirring until dissolved and then add the apple mixture.
  • Step 4: Lower stove temperature to medium heat before adding in butter.
  • Step 5: Simmer on this temperature until the apples are soft or al dente.
  • Step 6: Mix cornstarch with ¼ cup of warm water and add slowly to the apple filling mixture to avoid the formation of lumps.
  • Step 7: Stir the mixture in the saucepan until sauce filling thickens (approximately 15 minutes).

Final Steps

  • Step 1: Let cool, then add a good amount of apple filling onto the centre of each individual crepe. Proceed to roll around the filling to form tube shapes.
  • Step 2: Top with whipped cream and sprinkle with cinnamon.
  • Step 3: Serve and enjoy!
