Goat Cheese and Green Chili Quesadillas

Ingredients:

1 package small flour tortillas

2 tbsp. vegetable oil

6 oz Monterrey Jack cheese, shredded

3 oz soft goat cheese

1 can chopped and drained green chilies, or 1/2 cup salsa verde

1/2 cup cilantro

2 tbsp finely chopped pickled jalapeños

2 scallions finely chopped

1 jar corn relish

8 oz sour cream (optional)

1.) Begin by either grilling the tortillas or cooking them in oil in a frying pan, until lightly browned

2.) Preheat oven to 375 F., line baking sheets with parchment paper

3.) Arrange four tortillas on pan, putting 1/4 of the Monterrey Jack over each tortilla, topping with 1/4 each of the goat cheese, green chilies, cilantro, jalapeños, scallions, and several tablespoons of  corn relish.

4.) Top with the remaining tortillas, and then cover with foil. Bake for 10 minutes.

5.) Cut quesadillas into six pieces, and garnish with cilantro, sour cream and more corn relish.
