Ingredients:
1 box of falafel mix
2 tomatoes
1 red onion
pitas
tahini

Hummus
1 can of chickpeas
2 cloves of garlic
olive oil

Tzatziki
2 small containers of greek yogurt
2 cucumbers, peeled, seeded, and diced
fresh dill, to taste
fresh mint, to taste

Method:

1.) The simplest way to make falafel at home is to buy a box of falafel mix. Just follow the directions on the box! The box mix is cheap and saves you time allowing you to make great sauces.

2.) To make your tzatziki, first peel the cucumbers. It doesn’t have to be precise, just remove the majority of the skin. Then slice them in half and use a spoon to remove the seeds. Cut cucumbers into small chunks.

3.) Place the cucumber chunks in a food processor with the greek yogurt. Once you see the cucumbers start to blend with the yogurt stop and toss in dill and mint. Then resume blending until finished. Though tzatziki isn’t a traditional falafel topping I’ve found it to be a great complement to our next sauce, hummus.

4.) Clean out the food processor and crack open the can of chickpeas. Process them, adding in olive oil slowly during the process. Then add two cloves of thinly sliced garlic. Keep mixing until all the chickpeas have been turned into smooth paste. You can add parsley into the mix if you want to give it an extra kick or as a fancy garnish.

5.) To finish off your sandwich add some thinly sliced red onion and tomato. Now you have lunch for the next three days.

Serves between 4 and 6 people.
