Raw fish, rice and everything nice is what this delicacy is made of.
Sushi is a healthy, fresh and simple food that can be enjoyed in a variety of different ways and at a variety of different places.
One place that knows their sushi is Kinki, a restaurant located in the Byward Market which serves Asian-Fusion food.
According to Kinki’s website, the original concept of sushi was a way to store and preserve fish by packaging it with vinegar rice. It wasn’t until the 1800s that it started to be considered a cultural cuisine in Japan.
Sushi didn’t make its way to North America until the 1960s, says Andy Sasmito, a chef at Kinki. “Sushi started off as street food because they didn’t have the technology or refrigeration. So whatever they had, they had to sell that day,” Sasmito says.
Kinki head chef Ferdui Elton has been working at Kinki for three months and says there are many benefits to eating sushi.
“Sushi is healthy, it is always fresh and it is easy and simple food,” Elton says.
These sushi chefs say they would never eat pre-packaged sushi.
“Sushi is meant to be fresh, so a day-old roll is not withholding to the ideal that sushi should always be fresh,” says Elton.
Kinki is a fusion restaurant, so they do not serve traditional sushi. It is also not an all-you-can-eat facility.
“All-you-can-eat places are a different market, with different methods and different styles,” Sasmito says.
Many Carleton students have taken advantage of the all-you-can-eat sushi experience.
Katie Chung, a Carleton student, says she “loves sushi because it’s healthy yet super filling.”
“It is not only raw fish, you can get a lot of variety,” Chung adds.
Beware of the deadly wasabi spice that comes on every table, as it is intended to leave the guests with a little “kick.”
“I like miso soup because it has a lot of seaweed and tofu in it,” Zaharina Mohd Khalid says, a frequent all-you-can-eat sushi visitor.
She also adds “sushi has everything you need in that one small bite: protein, vegetable and rice.” Tempura, teriyaki and stir fry are also popular menu items.
Rich in history and health benefits, sushi is a cultural cuisine that is really catching on.
