Ingredients:
- 2 cups frozen corn
- 1 cup canned black beans
- ½ cup finely diced red pepper
- ¼ red onion finely chopped
- Handful of chopped cilantro
- Juice of ½ lime
- 1 tbsp. olive oil
- 1/2 tbsp. rice vinegar (can be re
placed with regular vinegar)
- Cumin
- Salt and pepper to taste
Instructions:
- Defrost frozen corn in the microwave in a large bowl (30-45 seconds).

- 1 whole-wheat tortilla wrap
- 2-3 eggs
- Prepared and crumbled Ready Crisp
Bacon (3 slices)
- ¼ cup diced red/yellow peppers
- ¼ grated cheddar cheese
- 2-3 tbsp. medium salsa
- Splash of milk
- Salt and pepper to taste
Instructions:
- Lay tortilla on a large plate.
- Spread salsa evenly along middle
- Crack eggs into a microwave-safe bowl and add milk, salt and pepper.
