Vegan Gluten Free Banana Pancakes
(Yields 12 pancakes)
Have you ever looked outside and noticed it’s Sunday and raining? Same. Then I go into fan girl mode and start jamming out to Jack Johnson’s “Banana Pancakes.” Totally kidding, but still suitable. The colder weather is coming and to cheer us up there is comfort food.
But not everybody wants the unhealthy side effects. Here, I present to you a vegan banana pancake recipe—for the days when comfort and health collide. Don’t be fooled by the name, it is a quick and easy recipe!
Ingredients
-1 cup rice flour
-1 cup oat flour
-2 teaspoons baking powder
-1 teaspoon ground cinnamon
-1 ½ cups almond milk (or other non-dairy milk)
-2 tablespoons agave or maple syrup
-2 teaspoons vanilla extract
-1 tablespoon extra virgin olive oil
-2 bananas (mashed)
-oil to grease pan
Instructions
1) Mix all the dry ingredients in a bowl.
2) Mix all the wet ingredients in another bowl.
3) Combine dry and wet ingredients.
4) Add more water or non-dairy milk if needed. Batter should be easy to pour but remain slightly dense.
5) Grease pan with oil and heat (I heated pan at a 5).
6) Once pan is hot carefully pour a dollop of batter onto it.
7) Please watch carefully, it cooks very fast!
8) Serve with fresh fruit and nuts while listening to Jack Johnson.
