The goal for poutine flambé was to make poutine that would catch fire. We succeeded. Combining booze and open flame is dangerous and irresponsible. When playing with fire or booze it is important to keep sober friends around with fire extinguishers and 911 already punched into their phone.
Ingredients:
6 russet potatoes
1/4 cup flour
4 tbsp. butter
1/2 a red onion
2 tbsp. ketchup
1/2 tsp. Worcester sauce
1 tsp. rice or cider vinegar
4 cups of beef stock
cheese curds
2 cloves of garlic
salt and pepper
olive oil
ounce of whisky, brandy, or rum—preferably from your friends’ liquor cabinet
1.) Pre heat oven to 375 F.
2.) Cut russet potatoes into fry shapes.
3.) Pat these dry on a paper towel.
4.) Spread fries over a baking sheet, and lightly drizzle with olive oil and salt. Toss the fries and oil together.
5.) Place pan in the oven for about 25 mins or until crisp.
6.) While the fries are baking heat a saucepan for gravy, melting the butter.
7.) Cut up half of a red onion and garlic into small bits.
8.) Add onions and garlic to saucepan.
9.) Once onions are translucent, stir in the flour then add beef stock.
10.) Add everything except the cheese.
11.) Stir and keep on low heat until the fries are done.
12.) Take fries out of oven and place in a serving dish. Add cheese on top.
13.) Heat the liquor from your friends’ cabinet until hot, but not boiling. That point is very important, as the liquor won’t catch fire if it’s boiling.
14.) Dump gravy over fries and cheese.
15.) Use a BBQ lighter or long match to light the fumes of the liqour on fire.
16.) Dump flames on poutine.
17.) Marvel at the fact that you did fancy cooking in the trashiest way possible.
18.) Eat it (once the flames go out).
NOTE:
If flames persist beyond 30 seconds you have created a fire and not a flambé. Use baking soda to extinguish flame.
