Steak Stir Fry with Noodles

Ingredients:
3 carrots
1 sweet green pepper
500 g (1 lb) top sirloin grilling steak, thinly sliced
1 ml (1/4 tsp) each salt and pepper
25 ml (2 tbsp) vegetable oil
1 onion, sliced
2 cloves garlic, minced
175 ml (3/4 cup) beef stock
5 ml (1 tsp) grated orange rind
50 ml (1/4 cup) orange juice
15 ml (1 tbsp) cornstarch
4 ml (3/4 tsp) hot pepper sauce
50 ml (1/4 cup) chopped fresh parsley
250 g (8 oz) linguine
Preparation:
Thinly slice carrots and green pepper; set aside.
Season steak with salt and pepper.
In a wok or large skillet, heat half the oil over high heat; stir-fry steak in batches, until browned but still pink inside (about 2 minutes). Transfer to a plate.
Heat remaining oil in the wok over medium heat; cook onion and garlic for 2 minutes. Add reserved carrots and green pepper; cook until slightly softened (4 minutes).
Whisk together beef stock, orange rind and juice, cornstarch and hot pepper sauce; add to the wok and bring to boil. Return meat and accumulated juices to wok along with parsley.
Meanwhile, in large pot of boiling salted water, cook linguine for 6 to 8 minutes or until tender but firm; drain and add to wok. Toss to coat well.
My Review:
A fairly straightforward recipe with lots of fresh veggies, this stir-fry was simple to make and positively delicious.
I changed a few of the ingredients to save myself a trip to the grocery store. I used a bit of flour rather than cornstarch, and a few sprinkles of chili powder instead of hot sauce. I’m a wimp when it comes to spice, so the chili powder was a nice alternative.
In my opinion, parsley doesn’t do anything but add colour, so I opted to skip over that ingredient all together.
The orange juice and rind made this recipe a winner as they added tang and flavour. I loved that the orange and beef stock sauce was a simple alternative to store bought sauces full of preservatives and sugar. This is definitely a healthy meal.
If you don’t like oranges, you might want to stay clear of this recipe. The orange juice was definitely a prominent flavour.
I suggest chopping up all your veggies before starting. This will save you from running from the stove top to the cutting board. Like any stir-fry, this recipe will create a few servings.
The recipe says it makes four servings, but my roommate and I managed to gobble it up in one sitting. To feed four people, a side dish would be needed. While my roommate chose to have it on rice rather than noodles, I opted for penne. It takes about 45 minutes to make. Enjoy.
